Enjoy and contemplate, what you know below the recipe or follow the instructions for watching our video recipe. To make this delicious pork chop dish, combine a simple sauce pan with a dry brine, then sear the pork chops in reverse. By searing the outside first with a delightful sear, you achieve an evenly cooked result that is then finished off in the oven at a low heat. Although you have tried the reverse sear method, you still end up with flavorful meat. To finish cooking, put them in the oven and then sear them in a skillet, which is one of the most common ways to cook steaks or chops.
Ingredients
Directions
Place your pork chops on a wire rack over a baking sheet and dry-brine them. Season all sides with salt. Refrigerate the pork chops uncovered for 1 hour. If you don’t have time, you can skip this step. Instead, proceed with the recipe and season the chops with salt to taste.
Remove the pork chops from your refrigerator, preheat your oven to 250ºF, and put the pork chops in the oven. Keep them on the wire rack over the baking sheet and roast for 25 minutes, until they reach 110ºF.
Make sure to sear the sides well to render any fat on the sides, regularly flipping the pork chops to cook them evenly and browning them on all sides. Start basting the pork chops with the butter mixture. Flip the pork chops and add thyme, garlic, and butter to the skillet. Put the pork chops in the skillet and sear for one minute. Heat vegetable oil in a large skillet over high heat until smoking. After roasting, remove the pork chops from the oven.
Enjoy! Cook the pork chops in a saucepan with the remaining butter over medium heat until the outside is completely seared and the pork chops reach your desired doneness, or 145ºF, about 2-3 minutes per side. Serve.
