One Pot French Onion Pasta

Tips for Making One Pot French Onion Pasta

  • If you don’t stir them enough, they will burn, but if you stir them too often, you won’t have a chance to brown them. So, it’s best to stir them every 3-4 minutes, especially when cooking the onions.
  • To make this French Onion Pasta, you will need stock vegetable and pasta instead of the traditional French onion soup flavors.
  • To make it gluten free, you can use gluten free pasta and a substitute for flour. Alternatively, you can completely omit the flour, but the pasta dish will not be as creamy.
  • To ensure an early taste test, start checking the doneness and follow the cooking times specified on the package instructions. Also, be sure to read the instructions carefully, as different types of pasta may require varying cooking times. While other pastas may cook quickly, I highly recommend orecchiette because its shape holds the sauce really well.
  • How to Make One Pot French Onion Soup

This classic French Onion Soup recipe begins with caramelized onions, which adds a deep golden brown color and achieves an amazing savory sweetness that makes adding it to pasta worth everything.

Start by cooking the onions down, stirring continually. Add a generous pinch of salt and many sliced yellow onions, just the way you like. Heat some olive oil in a high-sided pot or skillet until it shimmers, then caramelize the onions in it.

This will probably take about 30 minutes if you continue cooking and just add a splash of water to prevent the onions from burning or drying out at any point.

Cook these sliced cremini mushrooms with thyme and garlic until they release their moisture and become fragrant. Once the onions have caramelized deeply and the mushrooms have cooked down, add a few more minutes.

To thicken the mixture, a few tablespoons of flour are stirred in prior to adding the stock. To scrape up any browned particles from the bottom of the pot, a rubber spatula can be used, followed by deglazing the pan with a small amount of white wine.

Bring a pot of water to a boil and pour in your choice of liquid. You can substitute vegetable broth or chicken broth, but for this French onion pasta dish, beef stock will serve as the cooking liquid.

It is crucial to ensure that the pasta retains a slight firmness even after turning off the heat, as it will continue to cook in the pot. Stir regularly until it reaches the desired al dente texture and remember to season the boiling water, just as you would typically prepare the pasta.

Once you turn off the heat, the pasta may not seem like it has absorbed all the liquid, but this dish is about how the pasta releases starch and the caramelized onions while it cooks, which turns this into my favorite part, a rich and creamy sauce.

Finally, once the pasta is cooked, turn off the flame and stir in a spoonful of sherry vinegar, which adds a delightful acidity to enhance the delicious flavors of the dish.

Serve hot, with a few sprigs of fresh thyme or diced herbs, perhaps toasted breadcrumbs if that’s your preference, and savor!
