These cookies filled with caramel are simpler to make than you’d expect. Here’s the procedure:

  • Combine the dry ingredients – Start by mixing together the flour, powdered sugar, baking powder, and salt. A quick whisking is all that is necessary.
  • Incorporate the butter–Next, add the butter, blending it into the flour mixture to create a delicate and crumbly cookie.
  • Incorporate the moist components–Lastly, include the egg and vanilla essence and mix gently to merge and unite the dough.
  • You can do this by rolling the dough using a rolling pin on a lightly floured board or a sheet of parchment paper, ensuring that the thickness is an even ¼-inch.
  • You have the option to place it onto a baking sheet, or if you flattened the dough on a piece of parchment, you can place the entire cutting board in the refrigerator. This will assist in maintaining the shape of the cookies while they are being baked. Transfer the flattened cookie dough to the fridge and let it cool for 30 minutes. Cool–
  • I cut out the cookies. If that’s what you have, you can use a basic circular cookie cutter. On half of the cookies, I utilized a cookie mold to create the flower design. I utilized a 2 ½-inch ridged cookie cutter.
  • Bake the cookies until they just begin to turn light gold on the edges, then transfer them to a wire rack to cool.
  • Gently push it into the caramel, incorporating coconut along the edges. Next, firmly press the remaining cookies on the surface and carefully pipe the dulce de leche onto the undersides of half of the cookies.

These cookie sandwiches utilize primarily simple pantry staples. Here’s the list of required ingredients:

  • Confectioner’s sugar–This recipe requires confectioner’s sugar instead of granulated sugar because it provides the cookies with a wonderfully delicate texture.
  • All-purpose flour–The essential ingredient of the cookie.
  • Baking powder – which helps maintain its fluffy texture.
  • Salt–For balance.
  • If you happen to have salted butter, feel free to use it, but if you don’t, you can omit the salt. Personally, I prefer using unsalted butter.
  • Before using a large egg, make sure to let it come to room temperature. And don’t worry if you forget and it starts to sweat – just remember not to sweat it!
  • Vanilla essence–I adore this natural vanilla essence!
  • Create your own dulce de leche! Alternatively, opt for a high-quality variety that is indulgently smooth and creamy. You have the option to utilize a commercially prepared dulce de leche or prepare your own filling by utilizing canned sweetened condensed milk. It is entirely up to you.
  • It’s completely up to you! In total, you can use either coconut flakes or toasted unsweetened coconut, but I prefer to use sweetened shredded coconut.
  • Combine dry ingredients
    Mix in butter
    Add egg
    And vanilla
    Beat until dough comes together
Roll out the dough and chill
    Cut out circles
