I wanted to make a quick and flavorful soup for both my son Max and myself. But tonight’s dinner was a bowl of soup and a sandwich. My husband has been away for work, so I’ve been taking a cooking vacation.
I tasted a marinara sauce in a large bowl. The broth was so good, and it reminded me of an Italian vegetable soup that I had made a while back.
The dinner, which was a great soup, was the perfect meal for a busy weeknight. It was delicious and made with easy tortellini meatball soup, which was just what I had in the house. I didn’t have to spend too much time preparing it.
You can buy all the basics of this soup at your local Aldi. I used Italian herbs (oregano, basil, thyme) and added pepper, salt, garlic, fresh beef broth, crushed tomatoes, dried cheese tortellini, frozen mini Italian meatballs, and frozen vegetables as ingredients.
Convenient and effortless, this recipe can incorporate fresh vegetables such as golden onion, stalks of celery, carrots, corn, peas, green beans, spinach, and so on. Instead of fresh produce, I opted for frozen vegetables in preparing this dish. Although I typically utilize frozen mixed vegetables in soups like my creamy turkey or taco soup, I frequently have all of these ingredients readily available for speedy meals.
Today, I used some mini Italian meatballs that I found at GFS because I couldn’t find frozen meatballs that I can cut into pieces and use for recipes like spaghetti squash meatball subs or dishes.

Making your ingredients and tossing everything into a large soup pot, only cutting or slicing is not required. Essentially, this is a throw-together soup.
Turn the heat to medium-high and heat a large Dutch oven or soup pot. Pour water and beef broth or stock into it: Step 1.
Heat the medium down to medium heat. Bring to a boil and add spices, garlic, crushed tomatoes, mini meatballs, and frozen vegetables. Follow these 2 steps.

Your soup is finished, as indicated by the package instructions. Once it is done, add the dry tortellini in step 3. Please be aware that the cooking duration might differ based on the initial temperature of your ingredients.
